Shrimp Etouffee

Melt 2 sticks of butter. Blend 1 can Rotel tomatoes, 1 onion, 1/2 bell pepper – Liquify. Pour blended mixture in butter and simmer 45 minutes stirring occasionally. Add 3 cans cream of mushroom soup. Fried Scallops

1 pint scallops, fresh or canned salt and pepper cracker crumbs 1 egg, beaten   Wash the scallops, drain and dry thoroughly. Season fine cracker crumbs with salt and pepper.
